A note on the coffee component: This recipe does contain caffeine since we specify equal parts of freshly brewed coffee and water. The coffee adds richness and helps the cocoa flavors of the cake develop while the water ensures the proper amount of moisture. You may substitute a decaffeinated coffee without sacrificing the flavor. Theoretically, you may also play with the ratio of water to coffee too, but keep in mind that coffee can be acidic and playing with the ratio could affect how the cake rises along with the texture.
West Town Bakery's The Devil's Food Cake (or cupcakes)
INGREDIENTS:
1 Devils' Food Cake Mix Packet
3/4 cup of Oil (canola or vegetable)
3/4 cup warm water
3/4 cup of freshly brewed coffee (we like Dark Matter)
1 teaspoon of white vinegar
Directions for Cake

Preheat to 350°F
Spray or grease the included foil pan.
In a large bowl, empty the contents of the (dry) Devil's Food Cake Mix Packet.
In a separate bowl, combine the Oil, Vinegar, Water, and Coffee. Mix well.
Pour the wet ingredients into the dry ingredients and mix until well combined.
Pour the batter into the greased foil pan.
Bake in the pre-heated oven on the middle rack for 35-45 minutes until you can insert a toothpick in the center that comes out clean.
Allow the cake to cool completely to room temperature prior to adding frosting or cutting.
Directions for Cupcakes
Preheat to 350°F
In a large bowl, empty the contents of the (dry) Devil's Food Cake Mix Packet.
In a separate bowl, combine the Oil, Vinegar, Water, and Coffee. Mix well.
Pour the wet ingredients into the dry ingredients and mix until well combined.
Pour the batter into 12 lined muffin tins, filling 2/3 full.
Bake in the pre-heated oven on the middle rack for 20-23 minutes until you can insert a toothpick in the center that comes out clean.
Allow the cupcakes to cool completely to room temperature prior to adding frosting.
